Health Nut Banana Chocolate Muffins

So after my escapades in pursuit of the perfect Paleo pumpkin harvest bars last week, I decided to go back to the kitchen and come up with something even better and less leafy looking (see pumpkin post about the crazy effects of sun butter) for my sweet, spice-laden cravings for fall baked goods. These dark chocolate chip banana nut muffins fit the bill perfectly. They are so full of nutritious ingredients, fiber, protein, & deliciousness, there’s no need for extra sugar, grain, or dairy! #Paleoish #Glutenfree #DairyFree #LowinSugar #LotsofHealthyStuff

Here’s the recipe:

  • 2 cups mashed spotted bananas (about 3 large bananas~they just taste better if they are a little on the spotted, soft side)
  • 1 cup Thai coconut milk
  • 4 eggs (I used 1 duck egg in the mix, it just makes everything rise better, but chicken eggs work fine too)
  • 2 tsp good vanilla extract
  • 3 tbs good cinnamon
  • 1/4 tsp nutmeg
  • 1 cup natural peanut butter or almond butter
  • 2/3 cup almond flour
  • 2/3 cup stevia baking mix or chicory root fiber (your choice of sweetener-Maple syrup also works great)
  • 1/4 cup ground flax seed
  • 1/4 cup chia seeds
  • 1.5 tsp baking soda
  • 1 tsp sea salt
  • 1/3 cup cocoa nibs
  • 1 cup 60% Cacao Dark Chocolate chips
  • 2 cups chopped walnuts

Preheat oven to 350 degrees. Prep mini muffin pans with either coconut oil or muffin cups.

In a large bowl, whisk 4 eggs, add mashed bananas, 1 cup coconut milk, 1 cup peanut or almond butter, 2 tsp of vanilla and 2/3 cup Stevia baking mix.. In a second bowl combine dry ingredients: add in 2/3 cup almond flour, 1 tsp sea salt, 1/4 cup ground flax seed, 1/4 cup chia seeds, 1.5 tsp baking soda, 3 tbs cinnamon, 1/4 tsp nutmeg, stir together, and then mix entire dry ingredients in with mixed wet ingredients. Stir until just mixed. Add in 1/3 cup cocoa nibs, 1 cup dark chocolate chips, and 1/2 cup of the chopped walnuts. Spoon into muffin cups and sprinkle with extra walnuts. Bake for 12-13 minute until nicely browned and risen. You can test by inserting a toothpick..If it comes out clean, you are golden! You can also bake this mix in larger muffin tins or a greased cake pan..Allow 15-19 minutes to bake, test with a toothpick.
