Ahhh the Joy of Almond Nest Cookies

I don’t know about y’all, but November 1st is the most dangerous day of the year for this mama…After a frenzied night of putting costumes together, face-painting, chasing your kids from door to door, diving after sugar-addled little ninjas, just bound and determined to get hit by a car on their race to the next porch light, and finally dragging their hot mess of a sugar crashing carcass home, then on to search through their pillow-cases for “Dangerous” candy and treats, while palming a few of your favorite candy bars hoping the kids don’t notice, along the way..By 9:30pm on Halloween night, this mama and her kids are D.O.N.E.

The next day, you send them on their merry sugar-high way to their poor teachers, it’s their problem for the next 6 hours, and you, madame, are left looking at a bucket or pillow-case of candy bars. Well if you didn’t get the chance to sneak a few of your favorites out last night while the kids were still trippin’, my kids are now at the age that they have taken inventory of their precious treats, and Lord have mercy, their favorites are now my beloved Almond Joys..Those daggum bright blue wrappers, its’s nearly impossible to miss taking count of how many you have left in that bucket…so come 3:30pm, I can tell you, this mama would be getting a lot of grief, if she succumbed to the temptation of sweet thievery. One more draw back of your kids growing up I suppose. On top of the scouring contempt that my boys would be throwing my way, it’s all the dang sugar and processed ingredients that get me as well…November 1st is usually the first day of my downward slide into Holiday fluffdom. So this year, I ain’t having it.. I came up with an amazing cookie recipe….Cookies are the only thing that surpass my love of candy bars and pies..That’s why I can never bake them, unless I have hoards of guests to gobble them up before I can get my chubby mitts on them…But these grain free, gluten free, low-glycemic gems..Well, they will do the trick just fine..And the amazing part is they are so full of fiber and protein as opposed to white flour, you actually fill up on them! 1-2 cookies in the morning with my coffee, and I am satiated up to my eye-balls.

Here’s the recipe:

Ahh the Joy of Guilt-Free Almond, Chocolate, and Coconut Nest Cookies

  • Preheat oven to 350°
  • In a mixing bowl whisk 1 egg
  • Stir in 4 tbsp of Organic, Low-Glycemic Coconut Palm Sugar
  • and 2 Tbsp of Stevia Baking Mix
  • Add in 1/4 tsp Almond Extract,
  • Stir in 1.5 Cups Blanched Almond Meal Flour
  • With a fork, mash in 4 Tbsp of Virgin Coconut Oil
  • 1/2 tsp of sea salt
  • Stir all ingredients until if forms a nice dough.
  • To the dough, add in 1/2 cup dark Chocolate chips (60%Cocao)
  • 1/2 cup unsweetened organic coconut flakes
  • 1/2 cup Sliced Natural Almonds
  • Stir together, and with a spoon, form balls of dough and place on cookie sheet. With a fork, mash down the top slightly, and if you’d like, add a whole natural almond to the top of each cookie.
  • Bake for 10 minutes.
  • Let cool before eating.

Here’s a helpful hint for sweet lovers like me…The sirens call of a cookie straight out of the oven is hard to resist..However, with these cookies, if you don’t have the will power to let them cool, you better bring a spoon. The almond flour is really crumbly until it has a chance to set up with the coconut oil..I promise you, and I’m not saying I learned this by my own experience, *as I brush out the crumbs from my hair…and lap…and couch…and floor… Trust me…just give it a few. The coconut makes these cookies moist and decadent, and the almond flour keeps them tender and flaky. They hit the spot!
